Can I put a symlink to a document in a panel?

One of the items that can be added to panels is Launcher (a program launcher).  I would like to be able to "launch" some documents that I use frequently from one of may panels similarly to launcing a program.  Is this possible?

In the launcher command, use exo-open:

exo-open /path/to/my/document

...if the document extension is known, it will be opened in the default application.

Thanks, this works great!
However, I can't figure out how to label it.  If I don't choose an icon, it just leaves the position in the panel blank.  For now, I am using the file extension icon, but If there's some way to label it, that would be better.

Disregard the previous post, I see that in the advanced tab there is a check box to sho label instead of icon.
