Hi,
Using Xubuntu 16.04. Xfce 4.12
If I have for example a .png file on my desktop the icon
will be a thumbnail of the actual image.
What I want is to have just a
generic icon that's the same for all image files. So I know from looking
at it it's an image, but I do not want a thumbnail of that particular
image file.
I went into settings and unchecked Appearance> Menus and
Buttons> show images on buttons/menus but that's not it. I choose the
Humanity icons for the desktop.
Not sure how to do this?

Xfce uses tumbler to do thumbnail management. You can follow the instructions here and set disabled to "true" for any files that you don't want thumbnailed.
You'll probably also need to delete the existing thumbnail files and log out and back in again. For the existing thumbnail files, look at ~/.thumbnails and/or ~/.cache/thumbnails.

couldn't there just be a checkbox to enable or disable this?
