After updating my system I have a serious problem - all icons (both within menus and programs) and titlebars have changed to a bright shade of pink. I have enclosed a screenshot.
I've found someone with apparently the same issue on Arch. The solution is to downgrade llvm-libs, however I can't find such a package in Xubuntu.
What am I supposed to do?

Hello and welcome.
If the problem is the same as the Arch one (as it looks like it might be), it shouldn't affect Xubuntu 16.04 because it was an issue that affected llvm libs version 3.9 (which doesn't appear until yakkety (16.10). On ubuntu-based distros the package is called libllvmx.x (or in this case libllvm3.9. Do you have any PPAs enabled that would provide this package outside of base ubuntu repository packages? This might help:
apt-cache policy libllvm3.9
Anyways, someone has already created a launchpad bug report for this issue. And its not really an Xfce issue as it affects all DEs.

Thanks for actually replying, unlike all the official Ubuntu forums I posted this to.
The output says it comes from Xorg-Edgers:
libllvm3.9:
Installed: 1:3.9.1-0ubuntu0~xedgers16.04.1
Candidate: 1:3.9.1-0ubuntu0~xedgers16.04.1
Version table:
*** 1:3.9.1-0ubuntu0~xedgers16.04.1 500
500 http://ppa.launchpad.net/xorg-edgers/ppa/ubuntu xenial/main amd64 Packages
100 /var/lib/dpkg/status

Yep, thats it. The xorg-edgers PPA is installing that package. The good news is that the problem commit has been identified and a patch made available to rectify the situation. Its just a matter of the ubuntu folks applying the patch. You could follow the progress on the launchpad bug report.

Thanks a bunch so is there a way to fix this right now or do I have to wait for the patch?

I don't have any experience with the xorg-edgers PPA. Perhaps you can check with them if they have a patch or fix avilable or coming soon.
Otherwise, a simple workaround would be to revert from using this PPA and go back to the base packages from the repositories - those are not dependent on llvm 3.9. Assuming you don't have special requirements for using the PPA to begin with.

I used ppa-purge to remove xorg-edgers for now, and everything went back to normal. Hopefully this will be fixed soon. Thanks again for your help!
