I've seen and got used to this feature in Cinnamon. Switching to Arch+XFCE this is the only thing I would miss. I could only find the option to disable any action, but not changing it.
How can I achieve this?

You could modify the code yourself. The source is located here. There is a similar existing bug report and proposed patch to stop the client lower event. You could modify that patch to do something else.

Doesn't appear to be as simple as I thought it would a bit beyond my knowledge as of now
I don't see a Suggestions sub so I guess I'll use this thread. I suggest a simple dropdown:
in Settings -> Window Manager -> Advanced
below Double click action
title: Middle click action
containing: Lower (default), Minimize, Maximize, Close, Nothing
I think it would fit perfectly there and is something people were asking about from what I found out during my googles. It's a really convenient feature IMO.

As an alternative: put the panel to the top and use the "Window Buttons" panel item (in its settings: under "Appearance" - enabled "show button labels", under "Behavior" - Middle-click action - Close window); thus, the window names on the panel can be left-clicked to minimize/restore the windows and middle-clicked to close them.
