Most of the icons of the start-menue and some of the icons of the submenues are just a fallback-default (red-crossed sheet symbol).
What can I do to correct it, so that I have all different and appropriate symbols for the icons?

If you're using Ubuntu/Mint/Debian try the advice there, and tell us if the problem persists.

So, what icon theme are/were you using?
Did you select one of those new icon themes you installed? (you can do it in Settings > Appearance > Icons)

I used Adwaita, but don't know why.
When I changed to one of the xfce ones, all was ok.
