When I select Application Autostart in the Settings area, I notice items I do not want there. However, when I select something, the Remove button is greyed-out.
I have a couple questions:
How do I remove something?
How do I know how something got in the list?
Thank you.

If you uncheck, it prevents it from starting. The reason its greyed out and not letting you remove it is because you don't have permission to. This list is populated from entries in ~/.config/autostart (that you have access to) and/or /etc/xdg/autostart or /etc/xdg-xubuntu/autostart (that you don''t have access to). You can delete the files from /etc/xdg/autostart or /etc/xdg-xubuntu/autostart with sudo, but they will get replaced if the package that put them there gets updated.
Simply unchecking them will prevent them from starting.

Okay, thanks. That makes sense.
I did, of course, know about unchecking something, but didn't know about removing them. Thanks also for the specific files info. That is important info.
