Does anyone know how to change mouse pointer in xfce-screenshooter ?
It happens that when I take a screenshot the mouse pointer is so small that is seems invisible.

Make a screenshot of the whole screen and then look at it with reduced size, it is normal that what was already small becomes even smaller, especially if you have a high resolution screen.
Screenshot is not vector drawing where you can take whatever element and change its size, colour, position etc. It is like photo of your screen, so if you want to have a bigger pointer you have to have it bigger on the screen before screenshot, or retouch it later on the screenshot with Gimp or another retouching programme.
If you want to show something in the screenshot, easier mark it afterwards by using some striking, contrasting colour.

There is a perfect small application for this case scenario.
While running, the app would draw a window with the image of the cursor and follow mouse pointer.
When you close the app the window dissapears.
I forgot the name.
...A few search patterns later...
Found it. https://github.com/andykitchen/swcursor
What it needs to compile? gtk3, x11 and X11 extensions development libs
In Debian those are: libx11-dev libxext-dev libgtk-3-dev
While the app is running it will draw the image.
It also colors the pointer when mouse button is pressed.
If nothing else, you can always use the screen magnifier like kmag.
Kmag has an option to follow the mouse pointer and can save screenshots.
However when magnifying a part of the screen there can be a little blur, especially on the letters.
