Do you mean unhide the entries you hid? If so, look at ~/.local/share/applications for the entries. Delete those files (or delete the line in those files that reads "Hidden=True".

upon right clicking the xfce menu launcher button on the panel you get a menu like panel, remove, move, about .... above the edit applications option is whisker menu which is grayed out

I guess the main question is > why did I have to hide anything? after removing NM and rebooting shouldn't the entries have been removed as well?

Depends on how it was installed and removed. If the launcher/.desktop file is in your home directory then they won't be removed. Either will the config files etc.
