Coming from Mac & Windows land (but mostly Mac), I was surprised when I installed this on a freebsd machine, and expected to hop in to the system settings and be able to configure everything. But when it comes to networking, theres not a thing.
Do you HAVE to set that up via command line/config files, or is there an app you get that lets you do it in a more traditional, way, like its done on macOS or windows?

Hello and welcome.
Xfce doesn't have its own network management utility, distros generally supply one as part of their configuration. On Linux, this is usually network-manager-applet. On FreeBSD, if you're looking for something graphical, there is networkmgr, but you have to install it from ports. I just generally use the command line tools like ifconfig and wpa_supplicant.
Coming from Mac/Windows and jumping straight to FreeBSD is a bold move.

99.99% Mac, 00.01% Windows.
Setting up a new server and macOS just can't do what I need anymore.
So if I need to run a 'nix server, might as well be freebsd. the underpinning to macos have a very familiar feel, which is helpful. But yeah, it does seem like they all quietly pride themselves on what a pain it is to get things up and running. But it has one of the best networking stacks and I need some high class ddos abilities on this server so, thats how i got here.
xfce4 seems pretty nice though. Possible the primary feature that sold me on it is how there are menus everywhere! I just need to take some time to sit down and play with some mac themes for it and see if I can get it to feel REALLY comfortable. But i'll start other threads when I run in to trouble with those.
And yes I tried networkmgr and it is, in a word.... lacking.

FreeBSD will make a nice server. Personally, I ran openBSD as a home server for many years - very reliable and sensible.
Let us know how you make out.
