Set defaults on Install

I'm having some trouble finding any help on this, so I'll try posting it here.

I'm making a custom install CD for a Debian-based Linux distro and am getting tired of making changes every time I install. I know there has to be a way to set the background, icon location, Desktop Settings, and panel layouts during the install sequence but I haven't had any luck finding it or getting help. Any suggestions? I'm trying to set the default GDM login window as well, which is off topic but would also be helpful for me.

Thanks in advance.
