how to change the appearance of the default folders

Applications Menu > Settings > Appearance > Icons. Select the icon theme you want. If the one you want isn't installed, you'll have to install it.

I htink he want to change the "special" folders : Music, Documents, Videos ... They are created automtically by some programs. I suspect Gnome programs ... And yes, I'm also trying to find what define those icons. May be a post in xfce-dev mailing list. There are Thunar developper in there.
Xfce is NOT Xubuntu. Bugs in Xubuntu don't mean that Xfce is buggy ...

All the icons are set, AFAIK, by the theme. There are many available. I've never tried to change individual icons or groups, though.

The folder icons in the attached images are located in /usr/share/icons/gnome/?/places (where ? can be one of 16x16 22x22 24x24 32x32 48x48 256x256). The replacement icon set will also need to have those icons available if they are to be replaced. I use the Clarity icon set and these icons are re-defined in /usr/share/icons/Clarity/scalable/places - and as a result, the default icons are replaced when I choose this theme.
