Panel Customizing

Hello, now I know that there is a wiki and documentation and google but I couldn't really seem to find this even though this is pretty basic. I have two questions. First, how do you add custom launchers to the panel. Such as xchat or wicd or something. Simply doing panel prefs > add launchers doesn't work because it only gives me a list of default ones and when I search for more it doesnt find any. The second question is how do I change the icon of the applications menu from the mouse to the Arch linux logo.
