This is quite dumb of me but after using Xfce for quite a while I still wondered why I had to remove a keyboard shortcut and then re-add it when I simply wanted to edit it.
Then I figured that by double-clicking over the command we can edit it and by double-clicking over the shortcut we can also edit it.
Since Xfce has this strange effect of being difficult to find about some functionalities not only for me but for others too, I'm posting this.
A little video to make things even more clear ;-)

I don't think that's dumb! There are a number of tricks that aren't obvious. Here's one that took me a year+ to find:
To move the active window *and yourself* to the next workspace, do Ctrl+Alt+End. Repeat to simultaneously move to the next workspace and take the active window with you.
To do this backwards through your workspaces, do Ctrl+Alt+Home.

Exactly. Of course I had read that on the window manager keyboard shortcuts screen but when I wanted to do that I was lazy to look for it and just moved the screen with the menu option.
Now that you've mentioned it I think I won't forget.
